Roger Chilcon, Peru - Hard Lines Coffee Roasters
A brilliantly versatile Peruvian coffee roasted by Hard Lines in Cardiff that provides a big dose of balanced and juicy flavour in either filter coffee or espresso based drinks- great for a morning cuppa.
This washed number is grown and processed by Roger Chilcon Flores near the village of El Diamante, where protected forests and abundant natural resources make for an ideal coffee-growing environment. While he owns and manages this 3 hectare plot himself, he also assists his family and neighbouring farmers with their production, creating a real hotspot for specialty coffee in northeastern Peru.
What makes this cup really special is the extended fermentation period the cherries have undergone, first fermented overnight, then depulped and fermented again in bags for 24-36 hours. This process brings out some ultra juicy red berry notes that finish off this well rounded cup perfectly.
