Sweet Cheeks, Colombia - Elsewhere Coffee Roasters
Anaerobic. Natural. Gesha. Elsewhere sure know how to pick ‘em. Sweet Cheeks is a vibrant Colombian coffee sourced from the Reforest project in the Caldas and Tolima regions.
Like so many other coffee producing countries, Colombia is struggling with extreme weather events as a result of a rapidly changing climate. These severe droughts and natural disasters mean reduced yields and rising costs for farmers that mean they must compromise on quality to sustain their livelihoods. Colombian coffee farmers and exporters Forest are committing to climate action in their community by planting 50,000 native trees as part of their Reforest Project. Alongside revitalising the Colombian coffee landscape they are helping to build resilience for the future, teaching farmers sustainable farming methods so that they can adapt to this changing environment.
This Gesha coffee comes from trees planted as part of the project on the farms of 30 local producers near Forest’s El Vergel Estate, where the coffee was processed. The cherries are handpicked at peak ripeness to undergo 36 hours of aerobic pre fermentation to bring out the variety’s natural complexity. They are then transferred to shaded hermetic tanks for a slow and controlled 96 hour anaerobic fermentation. The coffee beans are then mechanically dried, rested and finally sun-dried on raised beds. This exhaustive process produces complex, slightly boozy fruit flavours of pineapple, pear and tamarillo- maxing out the flavour potential of the Gesha.
