PB² Villamaría, Colombia - Cairngorm Coffee

A new Colombian coffee fresh in from Cairngorm with complex juicy flavour. Importers Raw Material are calling this one PB², as it utilises Pink Bourbon Peaberries. This bag blends anoxic washed and anoxic natural Pink Bourbon Peaberry lots, combining a whole load of quality and a real challenge to process and roast.

The Peaberry coffee beans were isolated by local farmers to be processed at La Aurora, Raw Material’s close partner in Villamaría. Here they were fermented in a tank with cold water poured atop a plastic sheet to create a vacuum seal above the coffee cherries, reducing the fermentation temperature and creating an oxygen free environment. The washed portion was then pulped and the natural dried on raised beds before they were combined for export.

That intense process was all worth it for a flavour bomb like this, packing tasting notes of rhubarb and custard and honeydew melon into a vibrant cup with great body- ideal for filter brewing.
