Colombia Gaitania - 17 Grams
With fig, black cherry and blueberry tasting notes, this jammy beauty from 17 Grams sounds more like something you'd spread on toast than slurp down. Rest assured, it’s beautiful in the cup too.
Gaitania comes from a small village in the Tolima department of Colombia and has been farmed by the indigenous Nasa We’sx community. The Nasa We’sx inhabit the mountainous central departments of Cauca, Huila and Tolima and so their heritage is inextricably linked to Colombia’s coffee industry.
This lot is a great display of the significance of indigenous culture and ancestral knowledge in Colombian coffee, where their commitment to environmental guardianship makes this organic coffee way ahead of its time.
Coffee beans from Gaitania are notoriously fruity, and this natural one is elevated by 40 hour anaerobic fermentation, boosting those deep berry tasting notes and providing some rum-tinged flavour.
In 2022, they decided to build all that experience into roasting, nabbing a modded-up refurbished roaster from our friends at Crankhouse to set up at a new roastery location.
Since then they’ve been roasting up a storm, focusing on vibrant coffees and perfecting their espresso, filter and omni roast profiles.
