Ancestrale Cuvee: Pinot Noir, Chardonnay - Castello di Stefanago

A very special Italian sparkling wine from Castello di Stefanago- cause for celebration.

This blend of organic Pinot Noir and Chardonnay, classic Champagne grapes grown in Lombardy, has been produced using Stefanago’s ancestral method. Hand harvested grapes are picked at a precise ripeness, these are gently pressed and undergo a controlled first fermentation with native yeasts in the winter which is stopped when residual sugar reaches 30g per litre. Fermentation resumes in the spring, when residual sugars are transformed into soft, fine bubbles. The wine is aged on lees before disgorgement and is then being bottled and topped up with acacia aged Chardonnay reserve.

The resulting wine is deep and complex, a beautiful Champagne alternative for the festive season and beyond.

Castello di Stefanago is an Italian winery situated in the hills of lombardy. The family-owned estate has been committed to honouring the terroir and ecosystem of the region for generations, and made the switch to organic viticulture in 1998 in line with this ethos.

Stefanago’s winemaking is a ‘collaboration with nature’, relying on careful observation and precise timing to create characterful wines that truly represent their vintage and as such are variable year on year but always highly drinkable.
