It’s probably not the season for a wine that’s this pink, but we think this is a sure fire hit for dry rosé drinkers, and the perfect pairing for a festive prawn cocktail.

That intense strawberry colour is matched on the palate with ripe red berry flavour and lots of citrus acidity too. There’s more complexity to the finish, where concentrated fruit flavour is balanced by bitter cherry skin notes.

Parajes del Valle’s Spanish rose is made using 100% Bobal organically grown on dry farmed bush vines in Manchuela. Bobal is native to nearby Utiel Requena where it is the dominant grape and is often used in rosé production due to its brightly coloured skin and fresh fruit flavour. The Bobal was direct pressed, releasing that vibrant colour and fruity aromas, and then spontaneously fermented with native yeasts. Fermentation took place in stainless steel before being transferred to concrete for maturation on the lees.

Parajes del Valle is a project from major Spanish wine maker the Garcia Perez Group. The purpose is to produce organic wines from the Jumilla DO in Murcia that reflect the region’s character through straightforward and gentle making. These everyday wines are manually harvested early in the season and fermented and aged in stainless steel and concrete to retain freshness in the bottle.

The winery, founded in 2018 and led by young winemaker Maria Jover, sources grapes from certified organic plots around Jumilla and neighbouring Manchuela where dry farmed vineyards experience cold winters and very warm summers with less than  300 litres of rainfall per year.

Their major focus is on Monastrell, a red grape variety that thrives in this arid climate and whose concentrated spice and jammy fruit quality is showcased in their flagship wine.
