La Fila #1, Honduras - Round Hill Roastery

This Honduran coffee has been roasted by Round Hill specifically for filter brewing- perfect to bring out sweet and fruity notes of raspberry, brown sugar and strawberry yoghurt.

Round Hill Roastery are particularly excited about this coffee as it really stands out as an example of the Catimor cultivar. This plant was created by the Honduran Coffee Institute as a cross between Caturra and Sarchimor varieties and was developed to thrive in the lower altitude regions of Honduras. Catimor has had its critics in the specialty coffee world, but its cup scores are continuing to improve.

This washed coffee is the work of Roman Flores and his 13 year old son Amilcar who farm in Intibuca, a region of particularly high altitude for Honduras. Roman Flores has continually reinvested his profits into his farm, and is now passing on his knowledge of farming and processing to his sons. Amilcar prepared this coffee from his own 2 hectares of land, La Fila, and impressed exporters so much that it was selected as a micro lot.

This coffee roaster focuses on single farm and single estate coffee allows them to create strong relationships direct with suppliers and bring truly unique coffee and complete transparency to their customers.

Round Hill roast their coffee specifically for either filter or espresso so they can bring out the best in their beans and their bright bags make things simple: blue for filter, pink for espresso.
