Bookkisa, Ethiopia - Cartwheel Coffee
These Ethiopian coffee beans are a real summer treat, with juicy tasting notes of peach, blood orange and honey practically screaming at us to make a cold brew.
Cartwheel Coffee have sourced this lot from the Bookkisa kebele of Ethiopia, where Sookoo Coffee process the harvests of around 100 smallholder farmers at the Dambi Uddo drying station. This West Guji Zone company is owned and operated by Ture Waji, a young entrepreneur known locally as the King of Guji. Sookoo specialise in natural coffees, but are beginning to experiment with washed process lots like this one with great success.
The cherries are delivered to Dambi Uddo where they undergo 12 hours of wet-fermentation. The coffee is fully washed and then dried on raised African beds for up to 18 days where it is raked and turned hourly.
