Tarrazú, Costa Rica - Parallel Coffee
It doesn’t take much to sell us on a Costa Rican coffee, but this one from Parallel Coffee is a definite crowd pleaser, with a clean palate of almond and citrus and a satisfyingly caramel body.
These coffee beans come from smallholder micromills in the Tarrazú region of Costa Rica. This highly productive region is dotted with farms that work together to pick and sort their coffee during the harvest season. This washed coffee is produced and processed in separate lots at each mill before being combined at a central dry mill to create the ideal sweet and mild flavour profile.
Mixing these coffees into community lots like this one means that importers are able to buy higher volumes from producers, creating a more consistent final product that they can return to year on year and building strong relationships along the way.
Scottish coffee roasters Parallel are the new kids on the block. Founders Adam, Danny and Colin have a heap of collective experience in the coffee industry and they've now decided to channel their passion into a roastery that's all about seasonality and careful, light roasting to show off the natural characteristics of each lot.
The Parallel team source small quantities of exceptional quality coffee that changes frequently with the seasons- so their coffee might not hang about but there's always something fresh brewing!
The name Parallel comes from the parallel lines that sit at 23.5 degrees either side of the equator that form the coffee belt and the importance of provenance and terror to the supply chain.
