Paubrasil, Brazil - Parallel Coffee
There’s lots to love about Parallel’s Brazilian coffee, but we’ll give you three to start with.
1. The producers who contribute to Paubrasil, a lot named for the Brazilian national tree and put together by Ally Coffee, all belong to cooperatives or associations affiliated with the Cerrado Coffee Growers Federation who have signed a statement of good practices in accordance with Brazilian labour laws.
2. Every container of Paubrasil is fully traceable to its farms and certified as part of the Regiao Cerrado Mineiro Designation of Origin, recognising the unique identity of the Cerrado.
3. It tastes great. It can be hard to create balanced, smooth flavour profiles in a region that is undergoing rapid environmental change, but experienced Brazilian farmers invest in the advanced technology to consistently produce creamy, rich and everything you want from a Brazilian natural coffee.
Scottish coffee roasters Parallel are the new kids on the block. Founders Adam, Danny and Colin have a heap of collective experience in the coffee industry and they've now decided to channel their passion into a roastery that's all about seasonality and careful, light roasting to show off the natural characteristics of each lot.
The Parallel team source small quantities of exceptional quality coffee that changes frequently with the seasons- so their coffee might not hang about but there's always something fresh brewing!
The name Parallel comes from the parallel lines that sit at 23.5 degrees either side of the equator that form the coffee belt and the importance of provenance and terror to the supply chain.
