Armadillo, Honduras - Heartland Coffee

Heartland’s bold but nuanced coffee beans come from COCAFCAL Capucas cooperative on Honduras’s highest mountain. Pico Celaque in Copán is the source for many rivers and streams, making it a fertile coffee growing location for the smallholder farmers who grow on and around it.

Capucas boss Omar Rodriguez is on a mission to diversify the coffee of the farmers they work with, and this honey processed anaerobic coffee does just that. The cherries are pulped, then undergo a controlled anaerobic fermentation at a low temperature and slowly dried in solar dryers.

Capucas farmers have also been given the chance to take part in the of the Abeja bee project which encourages bees to pollinate coffee and fruit trees for biodiversity, while also giving farmers another stream of income outside of the harvest season through honey production. Honey². 

Antipodean duo Mal and Tara moved to London in 2000 and began roasting coffee in their flat as a passion project. 

After opening their commercial roastery, Heartland began supplying to restaurants and coffee shops across the city, but they had their sights set on something London couldn’t provide. In 2012, the couple relocated their family and business to Llandudno, gaining space, fresh air and joining the blossoming independent coffee scene in North Wales.

Heartland’s mission is the same as ever; offer coffee according to seasonality so that they can share the fullest expression of coffee with their customers.
