With boozy stewed cherry, rich chocolate body and tropical sweetness, this juicy bag of Indonesian coffee beans from Exemplar is here to finish the summer right.
The Barokah co-operative have revolutionised coffee on the island of Sumatra, with manager Triyono now supporting over 320 members with their harvest to ensure they can access the prices of the specialty coffee market.
All of these members live and farm at the foot of Mount Kerinci, a volcano that has enriched the surrounding soils and made it an ideal plateau for coffee cultivation. Barokoh operates 9 regional washing stations and a large central dry mill alongside a roasting facility and cupping lab that ensures quality is kept high. This anaerobic natural lot is a real rarity for this origin and clear evidence of how far Barokoh have helped coffee in Indonesia. Ripe coffee cherry was collected and taken to Koerintji Barokah Bersama where it was sorted and then sealed in airtight plastic bags which left to anaerobically ferment in a cool, dry location for 7 days. When fermentation is stopped, the coffee is moved to raised beds underneath domes which protect the parchment from rain and sun.
Exemplar is a Belfast based roasting and research project with a keen eye for what is groundbreaking and important in the specialty coffee industry. Founder Phil collaborates with industry experts, academics and baristas on quarterly magazines and carefully selects and roasts coffees that correspond to each issues’s focus. Together, they give an insight into where coffee is right now from a well-rounded perspective.
Previous issues have focused on industry trends like varietals, processing and altitude and spotlighted countries like Brazil and India that speak to the constantly expanding world of coffee. We’re super excited to have contributed to Exemplar’s latest magazine that shines a light on blends!
