Jhoan Vergara is world-renowned for the experimental processing he undertakes on his farm, Las Flores, in Colombia’s Huila region.

This lot features a double anaerobic washed process, with tartaric acid from local grapes added to the coffee during the second fermentation, before it is washed to remove any remaining mucilage. The naturally occurring chemical adds a distinctive fruity tartness which is balanced beautifully in a very clean cup with jasmine floral notes, and a strong grape aroma, ideal for brewing with a Kalita Wave.
