Pulp Fiction - Finca Maracay, Colombia - Coborn Coffee

Fruit fermented coffees are the growing thing in specialty coffee, we’ve tasted a few recently and it's remarkable how much the fruit flavour can transfer to the final cup!

This experimental Colombian coffee was grown by Luz Helena Salazar at her farm Finca Maracay in Quindío, who is constantly pushing the boundaries of specialty coffee. This coffee first underwent dry anaerobic fermentation for 72 hours, at which point dehydrated apple pulp was added. The coffee was then placed on raised beds with more apple pulp for a second stage of apple infusion.

Obviously there’s big apple flavour running the show, backed by other orchard fruits and balanced by demerara sweetness.

London based micro-roastery Coborn Coffee have a loyal following of supporters who have the same respect for both their high quality coffee and responsible sourcing and roasting. Justin and Kenny founded Coborn with the aim of making unique and great tasting coffees affordable to their local communities. In the two years since their inception, they’ve managed all of this while sourcing only from female majority owned farms and co-ops in developing economies.

We got chatting to these guys at London Coffee Festival and couldn’t get enough of their fun-filled brews or ambitious ideas for the coffee industry so we’re thrilled to have them on drop.
