Belfast roaster Bailies’s newest microlot feature comes from specialty focused Brazilian cooperative Coopfam- who assist farmers in the Matas de Minas region in producing high quality, premium coffees. As a member of Coopfam, Conceição Rodrigues da Costa Couto has won numerous awards across Brazil. Her farm sits at a relatively low altitude of 1050MASL, but produces outstanding coffees like this medium bodied cup, that’s richly nutty on the nose and has warm fruity notes.
After trying this one on Aeropress we’re getting apple and black cherry crumble, topped with sweet almonds.
