While we like to keep our house coffees crowd-pleasing and reliable, LOCAL Lots is all about showcasing the wilder side of coffee. We’re collaborating with Northside Coffee Roaster to highlight experimental micro- lots that are pushing the boundaries of your coffee tastebuds. This first edition features 100% Pink Bourbon coffee beans from Wilder Lasso’s farm El Mirador in Huila, Colombia.

While Wilder grew up in a coffee growing family, it was only after this former veterinarian took over his parent’s estate that he discovered a real passion for experimental coffee cultivation and processing, directing the farm towards specialty coffee production.

This lot underwent lactic washed processing, where the producer creates an ideal space for lactobacillus bacteria to flourish, and leaves the very sugary coffee cherry to ferment within this environment. After 90 hours of this fermentation, this coffee was pulped and gently washed and dried, resulting in a cup that carries a lot of ripe nectarine sweetness and good body, balanced by lime acidity and a pleasant lavender aroma and finish.
