Luis Anibal Calderon has made a name for himself in his native Colombia (and in the international specialty coffee scene!) by producing really high-quality micro lots and exploring rare varietals.

This lot, roasted by Cult, is 100% Pink Bourbon, a relatively recent mutation that produces pink coloured cherries and a unique flavour profile that balances citrus fruit acidity and honey sweetness. While Pink Bourbon is thought to have naturally occurred in Huila, this varietal is the subject of a lot of research to better understand its origins.

As a result of these special qualities, the coffee is harvested according to strict ripeness criteria on Luis’s farm Villa Betulia, and then sorted to remove defects. These washed coffee beans underwent 30 hours of underwater fermentation before pulping, washing and very careful drying.

This coffee is everything you’d expect from both this varietal and Luis’s detail-focused processing. Delicate flavours of kiwi, yuzu and raspberry exceptionally balanced by a toffee finish in the mouth- we highly recommend for filter brewing.
