These naturally processed coffee beans come from Finca La Aurora in the Caldas region of Colombia, which acts as a collecting point and washing station for smallholder farmers in the area. This community project provides fast and above market payment to local growers to ensure their consistent income throughout harvest season.

For this lot, Castillo coffee cherries were floated sorted and rested and fermented in cherry before drying on greenhouse beds for 15 days, resulting in a cup brimming over with mandarin and lychee sweetness and a healthy dose of white wine acidity.
