SIPRO, Mexico - 17 Grams
A spicy and sweet medium bodied Mexican coffee from Brighton’s 17 Grams, perfectly balanced for espresso brewing. SIPRO, or Sierra Productora de Cafe, is an association for young producers in Amatenango de la Frontera who hope to be the future of Mexican coffee farming. This area of Chiapas sits just across the border from the Guatemalan region of Huehuetenango, so shares the same climate and much of the same syrupy body and low acidity. This natural lot has an almost boozy quality, with notes of rum and raisin perfectly matched by a little orange zest.
Chiapa is Mexico’s poorest state and growers in this region, a majority of whom are indigenous, receive a much lower price on the coffee market than their counterparts in Oaxaca. As an organised collective, SIPRO has far more strength and much better access to the specialty coffee market than alone.
In 2022, they decided to build all that experience into roasting, nabbing a modded-up refurbished roaster from our friends at Crankhouse to set up at a new roastery location.
Since then they’ve been roasting up a storm, focusing on vibrant coffees and perfecting their espresso, filter and omni roast profiles.
