Mexico Tejao - Bailies Coffee Roasters
This washed Mexican coffee fresh from the Bailies roaster is deliciously sweet and balanced. Full-bodied with pear acidity, this bag has been sourced from Oaxaca’s Mazateca mountain range, and gets its name from the Mazateco word for ‘eagle’s nest’.
Here, coffee cultivation and production is performed with ancestral techniques and relies on the indigenous farmers in the region. These smallholders grow their coffee plants without the use of chemicals, and intercrop them with other native plants.
We're been enjoying this one with an Aeropress, where both the nutty body and fruity acidity have chance to shine.
